Ocean Umami

The initial floral nose gives way to notes of raspberry and dried apricots. Circadian Ocean Umami is full and round without being opulent and expresses great harmony. The mouthfeel is elegant, expressing luxuriant simplicity and precision steaming - cut after twenty seconds. The refined and silky foundation becomes more pronounced at the heart. The whole eventually melts into an exquisite bitterness tinged with the briny taste of the sea.

After a scorching summer, growing took place under dry conditions with high temperatures and less than anticipated rain. The wet autumn which followed continued right through to just before harvest when heavy and early frost began to form. The plants underwent full three weeks of gradual shading and harvest took place between April 21 and April 27. A full week earlier than expected due to a warm spring.
